The State Fair of Texas opened last Friday and is known to many as the “Fried Food Capital of Texas.” Every year food vendors unveil their new creations, most of them deep fried and bursting with an assortment of flavors. Here are the top six foods to sink your teeth into at the state fair this year:

6. State Fair Edible Cola

For the first time in the history of state fairs, you can eat the cup that your soda is served in. These cotton candy and candy apple flavored sodas are organically sweetened and served in disposable edible cups. Who knew soda could be delicious and environmentally friendly?

5. Lollipop Fried Bacon Wrapped Smoked Quail Breast on a Stick

Though the name seems self-explanatory, these bacon wrapped, deep fried quail breast skewers are filled with a a bit of unseeded jalapeno peppers and topped off with a cherry tomato. Served with a side of ranch dressing, these skewers are simultaneously spicy and savory.

4. Shrimp Fritters

Carrots, corn and peas are mixed with shrimp and deep fried to perfection to create this seafood lovers dish. They are served with seasonal fries and black pepper and vinegar sauce.

3. Loaded Bacon Mashed Potato Egg Roll – Old Mill Inn

This new dish incorporates the mouth watering taste of bacon and cheese covered mashed potatoes stuffed inside an egg roll. Each order comes with jalapenos and sour cream and is covered in bacon bits.

2. Fletcher’s Corny Dogs

Though they’re not a new addition, any trip to the state fair would be incomplete without a Fletcher’s Corny Dog. They are coated with cornmeal batter and fried just like any other corny dog, but the unique taste of the state fair corny dogs is undeniable. Fletcher’s has kept the secret of that taste hidden since 1942 and still outsells any other food vendor at the fair by a long shot.

1. Deep Fried Cannoli Bites

Covered in chocolate drizzle and powdered sugar, these Italian pastries get a state fair twist. Instead of being rolled into a tube shape, this version of the creamy dessert is shaped into bites, deep fried and sprinkled with chocolate chips. Another good name for this new dish would probably be Bite Sized Heaven.
